Zucchini & Lemon Spaghetti Recipe
Ingredients:
- 250g spaghetti
- 2 medium-sized zucchinis, thinly sliced
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- Zest of 1 lemon
- Juice of 1 lemon
- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
- Chopped fresh parsley for garnish
Procedure:

Cook the spaghetti according to package instructions. Drain and set aside.
In a large pan, heat olive oil over medium heat. Add sliced zucchinis and sauté until tender, about 5 minutes.
Add minced garlic to the pan and sauté for an additional 1-2 minutes. Stir in lemon zest.
Add the cooked spaghetti to the pan. Toss until the spaghetti is well coated with the zucchini, garlic, and lemon mixture.
Drizzle lemon juice over the spaghetti and zucchini. Season with salt and black pepper to taste. Toss to combine.
Sprinkle grated Parmesan cheese and chopped fresh parsley over the dish for garnish.
Serve the Zucchini & Lemon Spaghetti warm. Enjoy!
