Zucchini & Lemon Spaghetti Recipe

Ingredients:

  • 250g spaghetti
  • 2 medium-sized zucchinis, thinly sliced
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Chopped fresh parsley for garnish

Procedure:

  1. Cook Spaghetti:
  2. Cook the spaghetti according to package instructions. Drain and set aside.

  3. Sauté Zucchini:
  4. In a large pan, heat olive oil over medium heat. Add sliced zucchinis and sauté until tender, about 5 minutes.

  5. Add Garlic and Lemon Zest:
  6. Add minced garlic to the pan and sauté for an additional 1-2 minutes. Stir in lemon zest.

  7. Combine with Spaghetti:
  8. Add the cooked spaghetti to the pan. Toss until the spaghetti is well coated with the zucchini, garlic, and lemon mixture.

  9. Season:
  10. Drizzle lemon juice over the spaghetti and zucchini. Season with salt and black pepper to taste. Toss to combine.

  11. Garnish:
  12. Sprinkle grated Parmesan cheese and chopped fresh parsley over the dish for garnish.

  13. Serve:
  14. Serve the Zucchini & Lemon Spaghetti warm. Enjoy!
