Spaghetti Laksa Recipe
Ingredients:
- 200g spaghetti
- 400ml coconut milk
- 500ml chicken or vegetable broth
- 200g cooked chicken, shredded
- 200g prawns, peeled and deveined
- Bean sprouts, lime wedges, and fresh cilantro for garnish
- Salt and pepper to taste
Procedure:
- Prepare Laksa Paste:
In a food processor, combine lemongrass, shallots, garlic, ginger, red chillies, coriander powder, turmeric powder, and shrimp paste. Blend until you get a smooth paste.
- Cook Laksa Paste:
Heat vegetable oil in a large pan over medium heat. Add the Laksa paste and sauté for 5-7 minutes until fragrant.
- Cook Spaghetti:
In a separate pot, cook spaghetti according to package instructions. Drain and set aside.
- Combine Laksa and Broth:
Pour in coconut milk and chicken or vegetable broth into the pan with the Laksa paste. Bring the mixture to a simmer and let it cook for about 10 minutes.
- Add Protein:
Add shredded chicken and prawns to the Laksa broth. Cook until the prawns are pink and opaque.
- Season:
Season the Laksa broth with salt and pepper to taste.
- Assemble:
Place a portion of cooked spaghetti in serving bowls. Ladle the Laksa broth, chicken, and prawns over the spaghetti.
- Garnish:
Garnish with bean sprouts, lime wedges, and fresh cilantro.
- Serve:
Serve hot and enjoy your Spaghetti Laksa!
