Chicken Pesto Pasta Recipe

Ingredients:

  • 250g pasta (your choice)
  • 1 cup basil leaves
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup pine nuts
  • 2 cloves garlic
  • 1/2 cup extra-virgin olive oil
  • Salt and black pepper to taste
  • 1 cup cooked chicken breast, shredded
  • Cherry tomatoes for garnish

Procedure:

  1. Cook Pasta:
  2. Cook the pasta according to package instructions. Drain and set aside.

  3. Prepare Pesto Sauce:
  4. In a food processor, combine basil leaves, Parmesan cheese, pine nuts, and garlic. Pulse until finely chopped. With the processor running, slowly add the olive oil until the mixture forms a smooth sauce. Season with salt and black pepper to taste.

  5. Combine Pasta and Pesto:
  6. In a large bowl, toss the cooked pasta with the pesto sauce until well coated.

  7. Add Chicken:
  8. Fold in the shredded cooked chicken to the pasta and pesto mixture.

  9. Garnish:
  10. Garnish with cherry tomatoes for a burst of freshness.

  11. Serve:
  12. Serve the Chicken Pesto Pasta warm. Optionally, sprinkle additional Parmesan cheese on top.
